Description: La materia seca del ajo está constituida por un 70% de fructanos. La formación de bulbos de buena calidad está asociada a estos carbohidratos y a la presencia de horas de frío durante el desarrollo de la planta; pero no se conoce como estos factores ambientales afectan la síntesis que lleva a la acumulación de estos carbohidratos. El objetivo de este trabajo fue evaluar los cambios en la actividad de la enzima 1-SST durante el desarrollo de plantas sometidas a diferentes temperaturas de almacenamiento de las ¿semillas¿ y correlacionarla con las condiciones ambientales en el campo. Tres lotes de ¿semillas¿ de ajo cv ¿Coreano¿ fueron almacenados a TA, 5 y 10 ºC por 10 días y sembrados en Cosío, Aguascalientes. Durante el desarrollo se realizaron 7 muestreos mensuales, en cada muestreo se recolectaron cinco plantas por tratamiento para medir su altura, peso, índice de bulbificación, contenido de fructanos y actividad enzimática. Durante el cultivo se monitoreo diariamente la temperatura así como la irradiación lumínica máxima a través de una estación meteorológica cercana al campo de cultivo. No se encontraron efectos significativos de la temperatura de almacenamiento en el crecimiento, actividad enzimática y distribución de fructanos. El crecimiento de la planta fue mayor cuando las temperaturas ambientales y la irradiación lumínica fueron mayores (25-30 ºC y 700 W/m2). El IB permaneció constante en los primeros 203 DDS, y aumentó en los últimos 28 días del ciclo de cultivo. La actividad total de la 1-SST en bulbos y pseudo tallos durante los primeros muestreos fue baja y se incremento hacia el final del desarrollo (500 y 400 ¿g kestosa formada/hr, respectivamente), sin mostrar diferencias significativas lo que sugiere que la actividad de la 1-SST no regula el proceso de síntesis de fructanos. La distribución de fructanos fue aproximadamente constante (33 y 40 g/100gMS) en los primeros 203 DDS en pseudo tallos y bulbos, respectivamente. En los siguientes 28 días, hubo un decremento (13-18 g/100gMS) en pseudo tallos y un incremento (53g/100gMS) en bulbos. Estos resultados indican que durante la diferenciación del bulbo hay un transporte de los fructanos almacenados en el pseudo tallo hacia el bulbo.
The dry matter of garlic is made up of 70% of fructans. The formation of good bulbs quality is associated with these carbohydrates and the presence of chill hours during the plant development; however, is unknow how these environmental factors affect the biochemical processes that lead to the accumulation of these carbohydrates. The aim of this study was to evaluate changes in the activity of the enzyme 1-SST during the development of plants subject to different storage temperatures of the "seed" and correlate these changes with environmental conditions in the field area. Three garlic ¿seeds¿ sets cv ¿Coreano¿ were stored at RT, 5 and 10 ºC for 10 days and after sown in Cosío, Aguascalientes. During the development were made 7 monthly sampling, of each sampling were collected five plants per treatment to measure height, weight, bulbing index, content of fructans and enzyme activity. During the cultivation, the temperature and the irradiance maximum were registered everyday through a weather station near the crop field. There were no significant effects of storage temperature on growth, enzyme activity and distribution of fructans. The plant growth was higher when the environmental temperatures and the irradiance maximum were higher (25-30 ºC and 700 W/m2). The BI remained constant in the first 203 DAS, and increased in the last 28 days of the growing cycle. The total activity of 1-SST in bulbs and pseudo stems during the first sampling dates was low and increased towards the end of development (500 and 400 ¿g kestose formed/hr, respectively), not showing significant differences it suggests that the activity of 1-SST does not regulate the process of synthesis of fructans. The distribution of fructans was approximately constant (33 and 40 g/100g DM) in the first 203 DAS in pseudo stems and bulbs, respectively. In the next 28 days, there was a decrease (13-18 g/100g DM) in pseudo stems and increased (53g/100gMS) in bulbs. These results show that during the bulb differentiation there was a transport of fructans stored in the pseudo stem towards the bulb.
