Description: El daño renal en la diabetes se relaciona con un incremento en la secreción de citocinas proinflamatorias, tal como, el factor de necrosis tumoral-¿ (TNF-¿) y la Interleucina 1ß (IL-1ß), las cuales son activadas por el factor de transcripción NF-¿B e inhibidas por el receptor PPAR¿. Se ha demostrado que el frijol cocido mediante procesos tradicionales disminuye el daño renal en animales diabéticos, sin embargo, no se tiene información sobre las propiedades antidiabéticas de frijoles industrializados. Por lo tanto, el objetivo de este trabajo fue determinar el efecto del consumo de frijol industrializado sobre biomarcadores de inflamación y daño renal en ratas diabéticas. Se trabajó con 3 marcas de frijoles bayos refritos: La Costeña (LC), La Sierra (LS) e Isadora (Isa) de dos lotes diferentes. Los frijoles se secaron y se les determinó la concentración de fenoles y la capacidad antioxidante. Las harinas se incorporaron a dietas suplementadas con frijol (3 y 25%), las cuales se dieron a ratas diabéticas. En suero se determinó: glucosa, perfil lipídico y las concentraciones de TNF-¿ e IL-1ß. El daño renal, se evaluó cuantificando en orina la concentración de proteína total y en riñón la concentración relativa de NF-¿B, TNF¿, ICAM y VCAM. Los resultados muestran que no hay diferencia significativa en el contenido de fenoles totales para las harinas de LC, LS e Isa, sin embargo, las antocianinas se encontraron en mayor concentración en los frijoles LC (40%) los cuales mostraron mayor capacidad antioxidante (10.25 ¿M eq. Trolox/g de harina). Se observó disminución de glucosa sanguínea (hasta 40%), colesterol total (45-52 mg/dL vs. 70.29 mg/dL) y triglicéridos (117-159 mg/dL vs. 228 mg/dL) comparados con el control diabético. En cuanto al daño renal, solo se observó disminución de microalbúmina y proteína total en orina para LS y LC (3 y 25%). La expresión de NF-kB fue regulada principalmente por LC (3%). El segundo lote de frijol no disminuyó niveles de glucosa pero reguló las proteínas proinflamatorias TNF¿, ICAM y VCAM, principalmente por LC (3%). Los resultados sugieren que los frijoles enlatados (LS y LC) ejercen su actividad protectora a través de la regulación de la inflamación.
Renal damage on diabetes is related with the increase in secretion of proinflammatory cytokines, such as, the Tumor Necrosis Factor-¿ (TNF-¿) and the Interleukin 1ß (IL-1ß), wich are activated by the transcription factor NF-¿B and inhibited by receiver PPAR¿. It has been shown that cooking beans through traditional processes, reduces renal damage in diabetic animals, however, no information is available on antidiabetic properties of industrialized beans. Therefore, the objective of this study was to determine the effect of industrialized bean consumption on inflammation biomarkers and renal damage in diabetic rats. It was worked with 3 brands of refried beans bays: La Costeña (LC), La sierra (LS) and Isadora (Isa) from two different batches. The beans were dried and was determined the concentration of phenols and antioxidant capacity. The bean flour was added to diets supplemented with beans (3 and 25%), those were given to diabetic rats. Glucose, lipid profile and concentrations of TNF-¿ and IL-1ß, were determined on serum. Renal damage was evaluated by quantifying in the urine the total protein concentration and in the kidney the relative concentration of NF-¿B, TNF¿, ICAM and VCAM. The results showed that there is no significant difference in total phenol content for LC, LS and Isa flours, however, anthocyanins were found in greater concentrations in beans LC (40%) those showed higher antioxidant capacity (10, 25 mM eq. Trolox/g flour). There was a reduction of blood glucose (up to 40%), total choleseterol (45-52 mg / dL vs 70.29 mg / dL) and triglycerides (117-159 mg / dL vs 228 mg /dL) compared with diabetic control. Regard to renal damage, only was observed a diminution of microalbumin and total protein in urine for LS and LC (3 and 25%). The expression of NF-¿B was mainly regulated by LC (3%). The second batch of beans did not decrease glucose levels but these regulated the proinflamatory proteins TNF-¿, ICAM and VCAM, mainly by LC (3%). The results suggest the canned beans (LS and LC) perform their protective activity through the regulation of inflammation.
