Description: "El café es un producto alimenticio de importancia global debido a su alto consumo. Durante los procesos industriales para la obtención de café tostado y café soluble se generan diferentes tipos de desechos, los más importantes son el café gastado y la piel plateada de café. Estos residuos representan una fuente de contaminación ambiental debido a su alta carga de materia orgánica y a la presencia de sustancias tóxicas para las plantas y microorganismos del suelo. Sin embargo, en su composición poseen una gran cantidad de compuestos fenólicos que pueden ser utilizados para la síntesis verde de nanopartículas de plata, lo cual representa una alternativa sustentable y a amigable con el medio ambiente. Hoy en día las nanopartículas de plata (AgNPs) son utilizadas en las industrias médica, textil y alimenticia porque poseen actividad antimicrobiana contra baterias Gram positivas y negativas. En este trabajo se propusó la síntesis verde a partir de extractos de piel plateada de café de nanopartículas de plata estables y con actividad microbiológica. Se obtuvieron cuatro diferentes tipos de extractos acuoso-etanólicos a partir de piel plateada de café a los cuales se les evaluó la capacidad antioxidante usando los ensayos de ABTS, DPPH y Folin Ciocalteu, y su perfil químico fue determinado por HPLC/ DAD y UPLC-MS. Las AgNPs fueron sintetizadas con los extractos ricos en ácido clorogénico. Se empleo espectroscopia UV-Vis para confirmar la formación del plasmón de superficie en el rango característico para este tipo de material. Se evaluó la influencia de la concentración del extracto, la temperatura, el tiempo de reacción y el pH sobre el proceso de síntesis de las AgNPs y se observó una mayor velocidad de formación a pH básico. Mediante espectroscopia FTIR se observó que los grupos funcionales de los compuestos antioxidantes pueden participar en la formación de nanopartículas de plata. Se sintetizaron nanoparticulas esféricas e irregulares a partir de los cuatro extractos de piel plateada de café y tuvieron un diámetro menor a 100 nm. Las nanopartículas sintetizadas a partir del extracto C presentaron la mayor actividad antimicrobiana contra Escherichia coli y Listeria monocytogenes."
"Coffee is a food product of global importance due to its high consumption. During the industrial processing of roasted and soluble coffee different types of waste are generated, the most important are: the spent and the silver skin of coffee. These residues represent a source of environmental pollution because its high load of organic material and the presence of toxic to plants and soil microorganisms. However, its composition has a large number of phenolic compounds that can be used for green synthesis of silver nanoparticles, which represents a sustainable and friendly alternative for environment. Nowadays silver nanoparticles (AgNp) are widely used in the food, textile and medical industry; because they possess antimicrobial activity against positive and negative Gram bacteria. In this work, green synthesis of stable silver nanoparticles with antimicrobial activity was proposed using silver-skin coffee extracts. Four different types of aqueous- ethanol extracts were obtained from the silver skin of coffee, which were evaluated for their antioxidant capacity using the Folin Ciocalteu, ABTS and DPPH assays, and their chemical profile was determined by HPLC/DAD and UPLC-MS. AgNPs were synthesized with the extracs, rich in chlorogenic acid. UV-Vis spectroscopy was used to confirm the formation of the surface plasmon in the characteristic range for this type of material. The influence of the concentration of the extract, the temperature, the reaction time and the pH on the synthesis process of the AgNp were evaluated, observing that at basic pH the formation of AgNp was very fast. Fourier transform infrared spectra revealed that the funcional groups of antioxidant compounds may coordinate or complex into silver nanoparticles. Spherical and irregular shaped nanoparticles were synthetized from the four extracts of coffee silver skin and have a diameter ≤100 nm. The nanoparticles syntethized from the extract C have the greatest antimicrobial activity against Escherichia coli and Listeria monocytogenes. Keywords: Coffee silver skin"
