Description: Tradicionalmente los taninos del sorgo son considerados factores antinutricionales que afectan el aprovechamiento digestivo de los nutrientes. Sin embargo, el efecto de las kafirinas, que son las proteínas más abundantes, ha sido poco estudiado. Se plantearon tres experimentos con el objetivo de evaluar el efecto del nivel de taninos y/o kafirinas del sorgo adicionado a las dietas para cerdos en diferentes etapas de crecimiento sobre el desarrollo productivo y morfofisiológico del tracto digestivo (peso de órganos, pH de digestas, actividad enzimática del páncreas y morfología intestinal). En el primer experimento se emplearon lechones recién destetados y se evaluó el efecto del consumo de dietas elaboradas con sorgos conteniendo diferentes niveles de taninos, sobre las variables morfofisiológicas del tracto digestivo. En el segundo experimento se estudió el efecto del consumo de sorgos con diferentes niveles de taninos y kafirinas sobre las variables morfofisiológicas del tracto digestivo y la presencia de kafirinas en el contenido ileal. En el tercer experimento se evaluó el comportamiento productivo del cerdo y la expresión de los genes eIF2B1 y eIF4e, relacionados con el inicio de la síntesis de la proteína muscular, en dos fases de producción (crecimiento y finalización); los cerdos consumieron dietas elaboradas con sorgos con diferentes niveles de taninos y kafirinas. Los resultados indican que la inclusión de un sorgo alto en taninos en la dieta no causó un efecto detrimental sobre las características morfofisiológicas del tracto digestivo en lechones. Incrementó la actividad de la tripsina pancreática en los cerdos en crecimiento que consumieron los sorgos altos en taninos y kafirinas. Se detectó una alta concentración de kafirinas en los contenidos ileales de los cerdos que consumieron las dietas con un elevado nivel de kafirinas. Esto indica que probablemente, la digestibilidad de estas proteínas se redujo en la medida que se incrementó el nivel de kafirinas en el sorgo. En cerdos en crecimiento-finalización el nivel de kafirinas de los sorgos no comprometió el comportamiento productivo, mientras que el alto nivel de taninos disminuyó el consumo diario de alimento. La dieta y el sexo no influyeron en la expresión de los genes; sin embargo, la fase de producción influyó en la expresión del gen eIF4e, ya que en los cerdos en la fase de finalización este gen tuvo una mayor expresión. Para el gen eIF2B1 se presentó una interacción entre la fase y la dieta consumida. Este gen se expresó más en los cerdos que consumieron la dieta HT-HK respecto a los que consumieron la dieta de maíz y HT-LK. De igual manera, los cerdos que consumieron las dietas elaboradas con los sorgos bajos en taninos, expresaron más este gen que los que consumieron la dieta HT-LK. Se concluye que no sólo el nivel de taninos afecta las variables productivas, sino que el nivel de kafirinas también afecta diversas variables morfofisiológicas, por lo que estos dos componentes del sorgo deben ser considerados en conjunto cuando se formulen dietas para cerdos.
Traditionally sorghum tannins are considered antinutritional factors that affect the digestive utilization of nutrients. However, the effect of kafirins, which are the most abundant and poorly digestible proteins, have been little studied. Three experiments were carried out with the objective of evaluating the effect of the level of tannins and / or kaffirins of sorghum added to the diets for pigs in different stages of growth on the productive and morphophysiological development of the digestive tract (organ weight, enzymatic activity of the pancreas and intestinal morphology). In the first experiment, newly weaned piglets were used and the effect of the consumption of diets made with sorghums containing different levels of tannins on the morphophysiological variables of the digestive tract was evaluated. In the second experiment the effect of sorghum consumption with different levels of tannins and kaffirins on the morphophysiological variables of the digestive tract and the presence of kaffirins in the ileal content were studied. In the third experiment the productive behavior and expression of the eIF2B1 and eIF4e genes, related to the initiation of muscle protein synthesis, were evaluated in two phases of production (growth and finishing), which consumed diets made with sorghum different levels of tannins and kaffirins. The results indicate that the inclusion of a high sorghum in tannins in the diet, did not cause a detrimental effect on the morphophysiological characteristics of the digestive tract in piglets. The activity of pancreatic trypsin was increased in growing pigs that consumed the high sorghums in tannins and kaffirins. A high concentration of kaffirins was detected in the ileal contents of the pigs that consumed the diets with a high level of kaffirins. This indicates that probably the digestibility of these proteins was reduced as the level of kaffirins in the sorghum increased. In growing-finishing pigs the level of kaffirins of sorghum did not compromise productive behavior, while the high level of tannins decreased daily feed intake. Diet and sex did not influence the expression of genes; however, the production phase influenced the expression of the eIF4e gene, since in the pigs in the finalization phase this gene had a greater expression. For the eIF2B1 gene an interaction between the phase and the diet consumed was presented. This gene was more expressed in pigs that consumed the HT-HK diet than those consumed the maize and HT-LK diet. Similarly, pigs consuming diets made with low tannin sorghums expressed more of this gene than those consumed the HT-LK diet. It is concluded that not only the level of tannins affects the productive variables, but the level of kaffirins also affects several morphophysiological variables, so these two components of sorghum should be considered together when formulating diets for pigs.
