dc.descriptionEl comportamiento alimentario que se ha relacionado con la obesidad diabetes y enfermedades cardiovasculares requiere ser estudiado desde los enfoques de las teorías del comportamiento, para comprender los motivos que conllevan a ciertas conductas desfavorables para la salud. El objetivo del presente estudio fue determinar las creencias y normas sociales relacionadas con la obesidad y con el riesgo de enfermedades cardiovasculares y diabetes en mujeres del municipio de Querétaro. Se revisaron los hallazgos de estudios en mujeres mexicanas que documentaban factores sociales y cultuales relacionados con la alimentación y la obesidad, posteriormente se desarrolló un instrumento para medir los factores más prevalentes y se aplicó en Querétaro, México (n=243). La validación del instrumento se realizó mediante análisis factorial exploratorio, confirmatorio y ANOVA. Posteriormente se aplicó el instrumento validado a una muestra de 321 mujeres del Municipio de Querétaro, Qro. Además se registraron variables socioeconómicas, de actividad física y de dieta. Se midieron y pesaron a las mujeres y se tomó una muestra de sangre para determinar concentraciones de glucosa, lípidos e insulina. Mediante ecuaciones estructurales se determinaron las relaciones causales de obesidad, resistencia a la insulina como marcador de riesgo de diabetes y el índice triglicéridos/colesterol HDL como marcador de riesgo cardiovascular. Los modelos confirmaron la relación de inseguridad alimentaria en el pasado con una sobre-valoración de los alimentos y de la saciedad, que a su vez se relacionaron con una ingesta elevada de carbohidratos que se asociaron a obesidad y consecuentemente a riesgo de diabetes. Similarmente la ingesta elevada de carbohidratos se relacionó con un alto riesgo de enfermedades cardiovasculares. La asociación del nivel socioeconómico medio y medio bajo con un mayor riesgo de diabetes y enfermedades cardiovasculares se puede explicar por las experiencias de inseguridad alimentaria que cimientan un alto valor de la alimentación y consecuentemente conductas alimentarias desfavorables que son enfocadas a la saciedad y al gozo de los alimentos. Las estrategias de salud pública dirigidas a segmentos socioeconómicos medio y bajo deben considerar los motivos verdaderos que guían la elección de alimentos en la vida cotidiana en campañas que promueven una alimentación saludable.es_ES
dc.descriptionObesity and cardio-metabolic diseases keep increasing and cause most deaths in adults. Eating behavior must be analyzed considering the documented theories of behavior to understand the motives that influence an adverse behavior. The objective of the present work was to determine the beliefs and social norms related to obesity and to diabetes and cardiovascular diseases in women from the municipality of Queretaro. A review of previous findings in Mexican women that reported social and cultural factors related to obesity and food intake was performed. An instrument to measure the most prevalent factors was developed and administered to women in Queretaro, Mexico (n=243). The instrument was validated with exploratory and confirmatory factor analysis and ANOVA. The scales represented the value of eating, the value of satiation and the value of eating and satiation in children. In the next phase, the instrument was administered to 321 women from the municipality of Queretaro. Socioeconomic variables, food insecurity, physical activity and food intake were included in a questionnaire. In addition, women were measured and weighed, and provided a blood sample to determine glucose, lipids and insulin concentration. With structural equation modeling, the causal relations of obesity, risk of diabetes and cardiovascular disease were determined. The models confirmed the association of food insecurity in the past with an overvaluation of eating and satiation, which was related with a high intake of carbohydrates that predicted obesity and consequently diabetes risk. Similarly, an elevated intake of carbohydrates was associated with a higher risk of cardiovascular disease. The association between medium and medium- low socioeconomic with a higher risk of diabetes and cardiovascular disease, can be explained by previous experienced of food insecurity that establishes an overvaluation of eating and satiation, consequently adverse eating behavior is focused to the hedonic and satiation characteristics of food. Public health strategies aimed to people of middle and middle low socioeconomic status, should consider the real motives the drive food choice in everyday women´s lives.es_ES
