Description: La dieta tradicional mexicana ha sido recomendada por algunas asociaciones internacionales de salud para el control y prevención de enfermedades crónicas degenerativas; sin embargo, existe poca información que respalde esta información. El objetivo del presente estudio fue evaluar la asociación entre el perfil de alimentación y de inflamación con el riesgo de desarrollar diabetes y enfermedades cardiovasculares en una muestra tomada por autoselección de la zona urbana del estado de Querétaro. Este estudio fue observacional, transversal y comparativo e incluyó a 224 mujeres, a las cuales se les realizaron evaluaciones antropométricas (peso, talla, cintura y cadera), bioquímicas (glucosa, perfil lipídico, citocinas y CRP) y dietéticas (encuesta de frecuencia de consumo de alimentos semicuantitativa). Se clasificó a la muestra en hipertensos, diabéticos, hiperglucémicos, dislipidémicos y sanos. Se encontró una prevalencia de sobrepeso y obesidad del 79%. Sólo el 11% de la muestra se encontró sana con respecto a la glucosa sérica, perfil lipídico y presión sanguínea. Posteriormente se excluyó de la muestra a los sujetos que tenían diagnóstico previo de su enfermedad, y se estudió únicamente a los sujetos sanos y a los que no tenían diagnóstico previo (dislipidemia e hiperglicemia) con el fin de evitar el sesgo ocasionado por el tratamiento médico. Se encontró evidencia de que la inflamación está asociada con el riesgo de enfermedades crónicas, IL-8 e IL-6 se asociaron positivamente con marcadores de riesgo cardiovascular .Mientras que, Il-1¿, TNF¿ y CRP se asociaron con mayores niveles de glucosa y se encontraron en concentraciones más elevadas en los sujetos con hiperglucemia. IL-10 e IL12p70 se encontraron más altas en los sujetos sanos y ambas se asociaron con menores niveles de colesterol sérico. El consumo de frijol y de tortilla se asoció con menores niveles de colesterol total y LDL, además estos alimentos se correlacionaron negativamente con CRP e IL-8, respectivamente. El consumo de lácteos bajos en grasa, pescados, frutas, verduras y cereales integrales se relacionaron con la disminución de parámetros de riesgo de obesidad, enfermedades cardiovasculares y diabetes, mientras que el consumo de nopal, leguminosas, pescados, frutas, aguacate, jitomate y cereales enteros se correlacionó negativamente con los niveles de proteínas inflamatorias. La muestra en estudio presenta un alto riesgo de enfermedades crónico-degenerativas asociadas a inflamación, las cuales podrían disminuir con patrones dietarios adecuados recomendando el consumo de fríjol y de tortilla de maíz.
The traditional Mexican diet has been recommended by some international health organizations for the control and prevention of chronic degenerative diseases; however, there is little information to support this information. The aim of this study was to evaluate the association between power profile and inflammation with the risk of developing diabetes and cardiovascular disease in a sample taken by self-selection of the urban area of the state of Queretaro. This study was observational, transversal, comparative and included 224 women, which were conducted anthropometric assessments (weight, height, waist and hip), biochemical (glucose, lipid profile, cytokines and CRP) and diet (Frequency Questionnaire semiquantitative food consumption). We classified the sample in hypertension, diabetes, hyperglycemic, dyslipidemia and healthy. prevalence of overweight and obesity of 79% was found. Only 11% of the sample was found with respect to healthy serum glucose, lipid profile and blood pressure. Later I was excluded from the sample subjects who had previous diagnosis of his illness, and was studied only healthy subjects and those who had no previous diagnosis (dyslipidemia and hyperglycemia) in order to avoid bias caused by medical treatment. evidence that inflammation is associated with the risk of chronic diseases, IL-8 and IL-6 were positively associated with cardiovascular risk markers .While, Il-1¿, TNF¿ and CRP were associated with higher levels was found glucose and were found in higher concentrations in subjects with hyperglycemia. IL-10 and IL12p70 found higher in healthy subjects and both were associated with lower serum cholesterol levels. The consumption of beans and tortilla was associated with lower levels of total cholesterol and LDL, plus these foods were negatively correlated with CRP and IL-8, respectively. Consumption of low-fat dairy, fish, fruits, vegetables and whole grains were associated with decreased risk parameters of obesity, cardiovascular disease and diabetes, while consumption of nopal, legumes, fish, fruits, avocado, tomato and whole grains was negatively correlated with the levels of inflammatory proteins. The study sample presents a high risk of chronic degenerative diseases associated with inflammation, which may decrease with appropriate dietary patterns recommended consumption of beans and corn tortilla.
