Description: El mango mínimamente procesado (MMP) enfrenta problemas de deterioro que disminuye su vida de anaquel a menos de 12 días a 5 ºC. El objetivo de este trabajo fue mejorar el proceso de conservación de MMP empleando nanoemulsiones a base de almidón modificado y carboximetilcelulosa incorporando agentes hidrofóbicos, antioxidantes y pretratamientos de cloruro de calcio. Se llevaron a cabo dos experimentos: en el primer experimento se determinó el efecto de la aplicación de diferentes nanoemulsiones: 40 g/L almidón (A), 3 g/L carboximetilcelulosa y 40 g/L almidón + 3 g/L carboximetilcelulosa (A+CMC) en MMP, se almacenaron a 5 °C durante 16 días. En el segundo experimento se determinó el efecto del tamaño de partícula de A+CMC en la calidad del MMP. Se llevó a cabo una caracterización de los recubrimientos comestibles midiendo el tamaño de partícula, potencial zeta e índice de polidispersión (IDP). Se llevaron a cabo análisis fisicoquímicos, microbiológicos y evaluaciones sensoriales cada 4 días al MMP. El tamaño de partícula promedio de A, CMC y A+CMC fueron 261, 538 y 319 nm respectivamente y de potencial zeta -5.76, -42.30, -18.30 mV indicando que los sistemas nanoemulsionados fueron estables. Al final del almacenamiento, A+CMC disminuyó la firmeza 49.05% en comparación de A y CMC que fue de 63.69% y 52.06% respectivamente. El crecimiento de bacterias mesófilas aerobias (BMA) se mantuvo constante a partir de los 8 días con ~ 5.87 Log UFCg-1 en todos los tratamientos, A+CMC disminuyó el crecimiento de bacterias ácido lácticas (BAL) (~ 1.72 log UFCg-1) respecto a los demás tratamientos. El análisis sensorial indicó que la aceptación de MMP se encuentra dentro de los primeros 8 días de almacenamiento. En el estudio del efecto de tamaño de partícula de A+CMC, el tamaño de partícula de la emulsión fue 1203 nm y potencial zeta de -17 mV mientras que la nanoemulsion fue de 194 nm y potencial zeta -8 mV. No se observaron diferencias significativas en los SST, contenido de ácido ascórbico y pH, pero la concentración de compuestos fenólicos aumentó durante el tiempo de almacenamiento. La actividad PAL no cambió durante el tiempo de almacenamiento y PPO mostró la mayor actividad al día 16. El contenido de BMA aumentó significativamente después de 12 días mostrando una carga ¿ 5.4 log UFC g-1. Los mangos recubiertos con nanoemulsion tenían mejor calidad sensorial, no observando cambios en el sabor. La observación de SEM mostró una mejor distribución de la nanoemulsion sobre la fruta. El uso de la nanotecnología en los productos mínimamente procesados mostraron pueden mejorar sus propiedades funciones y de calidad.
Mangoes minimally processed (MMP) had some deterioration problems which decrease its shelf life less than 12 days at 5 ºC. The aim of this work was improve the conservation of MMP using nanoemulsions based on modified starch and carboxymethylcellulose, incorporating hydrophobic agents, antioxidants and calcium chloride pretreatment. Two experiments were performed: in the first experiment it was determined the effect of applying different nanoemulsions; 40 g/L starch (S), 3 g/L carboxymethylcellulose (CMC) and 40 g/L starch + 3 g/L carboxymethylcellulose (S+CMC) on quality product, they were stored at 5 ºC for 16 days. In the second experiment it was evaluated the effect of S+CMC with different particles sizes on the quality of fresh-cut mango. A characterization of edible coating is performed measuring the particle size, zeta potential (¿) and poly-dispersion index (PDI). Physicochemical analyzes, microbiological and sensory evaluations were performed every 4 days the fresh-cut mango. The particle size of S, CMC and S+CMC were 261, 538 and 319 nm respectively and -5.76, -42.30 and -18.30 of ¿, indicating stable systems. At the end of storage, S+CMC decreases the firmness of 49.05 % compared to S and CMC and that was 63.69% and 52.06% respectively. The grow of mesophilic aerobic bacteria (BMA) was maintained from 8 days to ~ 5.87 CFU g-1 compared to other treatments, S+CMC decreases the grow lactic acid bacteria (LAB) (~ 1.72 CFU g-1) compared to other treatments. Sensory analysis indicated that fresh-cut mango acceptance is within the first 8 days of storage. In the study the effect of particle size of S+CMC, the particle size of the emulsion was 1203 nm and -17 mV of ¿, while the nanoemulsion was 194 nm and -8 mV. No significant differences were observed in total soluble solids, activity and pH but the phenolic content increased during storage time. The PAL activity did not change during storage time and PPO showed the highest activity after 16 days of storage. The content of BMA increased significantly after 12 days showing a load ¿ 5.4 CFU g-1. The mangoes coated with nanoemulsion had the best sensory quality and the SEM observation showed a better distribution of the nanoemulsion over fruit. The use of nanotechnology in edible coating can improve their functional proprieties and the quality products.
