Description: El azúcar se ha considerado como uno de los principales responsables del aumento en la incidencia de la obesidad y el desarrollo de varias enfermedades crónicas no transmisibles. Esto originó la necesidad de buscar aditivos para sustituirla. De esta forma los edulcorantes fueron introducidos a la dieta de la población. Sin embargo, existe controversia sobre la posibilidad de que su consumo promueva alteraciones fisiológicas. El objetivo de este estudio fue evaluar el efecto que tiene el consumo de edulcorantes en el metabolismo de glucosa, insulina, triglicéridos y colesterol en adultos con un consumo habitual de 5 años de edulcorantes. Este estudio fue experimental, cruzado, ciego y aleatorizado. Por medio de una frecuencia de consumo de alimentos y una historia clínica se definieron los grupos: 1) un grupo de individuos con alto consumo de edulcorantes bajos en energía (EBE) y 2) un grupo con alto consumo de edulcorantes energéticos (EE). Cada grupo ingirió 237 ml de una bebida con EBE (aspartame y acesulfame k) y de EE (Fructosa y Glucosa) en dos sesiones diferentes con una diferencia de 13±3 días entre las pruebas. Se realizó antropometría y recordatorios de 24 horas. Se colocó un catéter a los sujetos y se tomó una muestra de sangre en el nivel basal. Se dio a consumir la bebida y se volvió a tomar una muestra sanguínea a los 5, 15, 30, 60 y 120 minutos después del consumo. El grupo EBE presentó colesterol más elevado que el grupo EE, ambos en parámetros adecuados. Los dos grupos presentaron una disminución de glucosa y un aumento de insulina no estadísticamente significativo con el consumo de la bebida EBE. Los grupos alcanzaron el pico máximo de glucosa a los 15 minutos, mientras que la insulina fue alcanzada a los 5 minutos por el grupo EBE y a los 15 minutos por el grupo EE. Los sujetos que consumen regularmente EBE aumentaron los triglicéridos al final de la prueba con la bebida EBE y EE, mientras que el grupo EE los disminuyó, sin ser estadísticamente significativo. Se concluye que el consumo regular preferente de EBE o EE, definirá la respuesta metabólica de una bebida con EBE o EE.
Sugar is considered as one of the main causes of the increased incidence of obesity and the development of several chronic diseases. This created the need to find additives to replace it. Thus sweeteners were introduced to the diet of people. However, there is controversy over the possibility that its consumption promotes physiological changes. The aim of this study was to evaluate the effect of the consumption of sweeteners on glucose, insulin, triglycerides and cholesterol in subjects with a 5 year regular consumption of diverse types of sweeteners. This was a single-blind randomized controlled trial. Subjects were asked about their frequency of food consumption and medical history, then groups were defined: 1) a group of individuals with high consumption of low energy sweeteners (EBE) and 2) a group with high consumption of energy sweeteners (EE). Each group drank 237 mL of a beverage with EBE (aspartame and acesulfame k) and EE (fructose and glucose) in two different sessions with a difference of 13 ± 3 days between tests. Anthropometry and reminders 24 hours was performed. A catheter was placed and a blood sample was taken at baseline. Subjects drank the beverage and then, a blood samples at 5, 15, 30, 60 and 120 minutes were taken. The EBE group had higher cholesterol than the EE group. Both groups showed lower glucose and increased insulin not statistically significant after intake of EBE beverages. Groups reached the peak of glucose at 15 minutes, while insulin was reached within 5 minutes by the EBE group and 15 minutes for the EE group. Subjects who regularly consume EBE had triglycerides increase at the end of the test with the EE beverages while the EE group was a decreased with not statistically significant differences. It is concluded that regular consumption of EBE or EE define the metabolic response to a EBE or EE beverage.
