Description: El maíz es el cereal de mayor consumo en México, se ha reportado que contiene compuestos bioactivos con potencial anticarcinogénico en su composición. El principal uso del maíz en México es la producción de harinas y tortillas, donde el grano es sometido a una cocción alcalina conocida como nixtamalización. El proceso de nixtamalización tradicional (NT) incrementa la calidad nutricional de la tortilla; sin embargo, también ocurre la pérdida de nutrientes y la generación de contaminantes ambientales, por ello se han implementado tecnologías alternativas para la producción de harinas de maíz nixtamalizado (HMN), como la Tecnología Limpia (TL). El objetivo del estudio fue evaluar y comparar la composición química y el contenido de compuestos bioactivos (compuestos fenólicos y fibra dietética total (FT), soluble (FS) e insoluble (FI)) de 4 harinas procesadas industrialmente: H1 y H2 procesadas mediante TL, H3 y H4 procesadas mediante NT; y tortillas elaboradas a partir de estas harinas. Los resultados no presentaron diferencia estadística significativa al comparar la composición química entre las diferentes harinas o tortillas. El contenido de fenoles totales, taninos condensados y flavonoides en las harinas no presentó diferencia estadística significativa; sin embargo, la cocción de la tortilla incrementa significativamente la concentración de fenoles y taninos condensados, y al mismo tiempo reduce el contenido de flavonoides. En general, las tortillas obtenidas mediante TL presentan una mayor concentración de compuestos bioactivos (FI, FT, fenoles totales y flavonoides) que las obtenidas por NT. También se evaluó el potencial quimioprotector de las tortillas sobre el estadio temprano de cáncer de colon, en ratas macho Sprague- Dawley inducidas con azoximetano (AOM) y alimentadas durante 15 semanas con una dieta basal adicionada con 22% de tortilla equivalente al consumo pér capita en la zona rural del país. Al finalizar el estudio los animales se sacrificaron y se cuantificó el número de fosas crípticas aberrantes (FCA) en tejido del colon distal. Los resultados muestran que la concentración de tortilla suministrada no disminuyó significativamente el desarrollo de FCA en ratas inducidas químicamente al comparar con el grupo control.
Maize is the most consumed cereal in Mexico. It has been reported that it contains bioactive compounds whit anticarcinogenic potential in its composition. The main use of maize in Mexico is for the production of flours and tortillas, in which the grain is submitted to an alkaline cooking, know as nixtamalization. The process of traditional nixtamalization (TN) increases the nutritional quality of the tortilla; however, there is also a loss of nutrients and the creation of environmental contaminants. For this reason, alternative technologies have been implemented for the production of nixtamalized maize flour (NMF), such as the Clean Technology (CT). The objective of this study was to evaluate and compare the chemical composition and content of bioactive compounds (phenolic compounds, an the total dietary fiber (TF), soluble (SF) and insoluble (IF)) of 4 industrially processed flours: H1 and H2 processed with CT, H3 and H4 processed with TN and tortillas made with these flours. Results showed no statistically significant difference upon comparing the chemical composition of the different flours or tortillas. The content of total phenolics, condensed tannins and flavonoids in the flours showed no statistically significant difference; however, cooking the tortilla significantly increases the concentration of phenolics and condensed tannins, while at the same time reducing the content of flavonoids. In general, tortillas obtained using CT have a higher concentration of bioactive compounds (IF, TF, total phenolics and flavonoids) than those obtained using TN. Also was evaluated the chemoprotective potential of tortillas on early stage colon cancer in male Sprague-Dawley rats given azoxymethane (AOM) and fed for 15 weeks with a basic diet to which was added 22% tortilla equivalent to the per capita consumption in rural areas of the country. At the end of the study, the animals were sacrificed and the number of aberrant crypt foci (ACF) was quantified in the distal colon tissue. Results show that the concentration of tortillas supplied did not significantly decrease the development of ACF in rats chemically induced when compared whit the control group.
