Descripción : El cultivo de chile (Capsicum annuum L.) es de gran importancia en México debido a que es una de las hortalizas más importantes en cuanto a producción a nivel nacional además de que México es el segundo productor a nivel mundial. Esto genera un gran impacto ambiental por las formas de producción actuales de este cultivo, por ello el manejo orgánico, y en particular la fertilización orgánica, surge como una opción viable ya que resulta altamente sustentable, agregando valor a los productos obtenidos bajo este método. Los objetivos de este trabajo fueron evaluar el efecto de la fertilización orgánica y el uso de biofertilizantes (Bacillus sp.) sobre la producción y calidad en frutos de chile serrano cultivar `Madero F-1`. Se plantearon tres tratamientos de fertilización: el orgánico en el cual se utilizó humus de lombriz en combinación con fosfato tricálcico y los biofertilizantes, el convencional en el que se utilizó urea y superfosfato triple, el orgánico-convencional en el que se utilizó urea y superfosfato triple más los biofertilizantes. Los tratamientos fueron aplicados a la misma dosis la cual fue 180-90-00 y la concentración de los biofertilizantes usada fue de 1x107 ufc mL-1, además de estos tratamientos se incluyó un testigo en el cual no se aplicó ningún tipo de fertilizante. La calidad comercial de los frutos se evaluó de acuerdo a la NMX-FF-025-SCFI-2007, los resultados muestran que la calidad comercial no se vio beneficiada por la fertilización orgánica bajo condiciones a campo abierto. Sin embargo en condiciones de invernadero se logró aumentar el peso (11.5%), la longitud (5.4%) y el diámetro (4.5 %) de los frutos, encontrándose la mayoría de ellos en primera calidad, lo cual influyó en el rendimiento del cultivo orgánico siendo mayor en un 41.3 % con respecto al cultivo convencional. Por su parte, el contenido nutrimental de los frutos bajo condiciones de invernadero se vio incrementado en lo referente a macro y micronutrientes [Cu (67.1%), Fe (56.5%), Mg (8.4%) y P (26.8)]. En el caso del contenido de vitamina C no existieron diferencias significativas entre los tratamientos. Para las condiciones de campo se logró incrementar el contenido de proteínas (20.2%), de vitamina A (39.6%), fenoles totales (11.89%) y capacidad antioxidante (7.5%), aunque el contenido de capsaicina fue mayor en el tratamiento orgánico (55.7%). Estos resultados muestran que la fertilización orgánica y el uso de biofertilizantes confieren a los frutos un mayor valor agregado, por lo que es una alternativa de producción debido a las diferentes características que adquieren los frutos obtenidos bajo este sistema.
The cultivation of pepper (Capsicum annuum L.) is of great importance in Mexico because it is one of the most important in terms of national vegetable production. In addition, Mexico is the second largest producer in the world, generating a large environmental impact on the current forms of production of this crop, so the organic management, in particular organic fertilization, emerges as a viable option because it is highly sustainable, adding value to the products obtained under this method. The objectives of this study were to evaluate the effect of organic fertilization and the use of biofertilizers (Bacillus sp.) on production and fruit quality in serrano pepper cultivation 'Madero F- 1', for which three fertilization treatments were raised; where the organic humus was used in combination with tricalcium phosphate and biofertilizer, conventional in which urea and superphosphate was used, the conventional organic in which was urea, superphosphate, and more bio-fertilizer was used. All were applied to the same dose of 180-90-00 and bio-fertilizers concentration used was 1x107 cfu mL-1. In addition to these treatments, there is a witness in which no fertilizer was applied or included. Commercial fruit quality was assessed according to the NMX -FF- 025- SCFI- 2007, the results show that the commercial quality not benefited from organic fertilization under field conditions open, yet under greenhouse conditions achieved weight increase (11.5 %) , length (5.4 %) and diameter ( 4.5 % ) of the fruit. The majority of them in first class influenced the performance of organic farming which was higher by 41.3 % compared to conventional farming. Meanwhile, chemical composition of the fruit under greenhouse conditions was increased with regard to macro and micronutrients [Cu (67.1 % ) , Fe ( 56.5 % ) , Mg (8.4 %) and P (8.26 % ] . In the case of vitamin C, there were no significant differences between treatments. The field conditions increased the protein content (20.2 % ) , vitamin A (39.6% ) , total phenolic (11.89 %) and antioxidant (7.5%) capacity. Although the capsaicin content was higher in the organic treatment (55.7 %), these results show that organic fertilization and the use of bio-fertilizers confer fruits greater added value. It is an alternative production due to the different characteristics they acquire the fruits under this system.
