Description: En la última década, la producción y el consumo de frutas y hortalizas frescas ha ido en aumento. Sin embargo, su composición puede proveer los suficientes nutrientes y condiciones para el desarrollo microorganismos patógenos y deterioradores entre los cuales destacan Salmonella spp y L. monocytogenes. Ya que éstos generalmente se consumen de manera cruda, sin ningún tipo de tratamiento que garantice su inocuidad, es indispensable el desarrollo de tratamientos y desinfectantes que no sean tóxicos ni corrosivos y que permitan reducir sustancialmente el número de microorganismos que se encuentran superficialmente en los alimentos. El agua electrolizada, es un agente alternativo que ha demostrado tener una actividad antimicrobiana contra microorganismos patógenos. El objetivo de esta investigación fue determinar el grado de desinfección del agua electrolizada neutra (AEN) y del NaClO en alimentos modelos (tomate, aguacate y espárrago) que presentan una topografía distinta así como la eliminación de Salmonella sp. y L. monocytogenes en la superficie del tomate y agauacate. Los alimentos de estudio fueron sumergidos en una solución de diferentes concentraciones de AEN (70-300) con distintos tiempos de contacto (1-5 min). La flora natural (coliformes, hongos y levaduras y bacteriaa mesifílicas) fueron determinadas. L. monocytogenes y Salmonella spp fueron inoculados en la superficie del tomate y del aguacate y tratados con AEN (200 ppm) y fueorn alamecndos a 4ªC durante 21 días. Hipoclorito de sodio, NaClO (200) y agua destilada fueron usados como estándar de desinfectante y como control negativo, respectivamente. Las reducciones más grandes (>3 log UFC/unidad) en la flora natural se alcanzaron en la superfice lisa como la del tomate, pero en el caso del aguacate, la efectividad del desinfcetabte es minima reduciendo entre 2-3 Log UC/unidad, probablemente debido a la rugosidad de la superficie. La efectividad de los tratamientos de desinfección del AEN (200) y del NaClO (120) fueron similares al no encontrarse diferencas significativas (p<0.05), reduciendo aproximadamente 2 Log UFC/unidad. Salmonella y L. monocytogenes fueron inoculados en el tomate, NaClO y AEN fueron capaces de inactivar más de 2.5 log UFC/unidad depsues de un tiempo de contacto de 1 min. Por otro lado, los tratamientos de desinfección del aguacate, las reducciones alcanzadas fueron <2 Log UFC/unidad a la misma concentración y tiempo. Los resultaos indican que la topografía de la frutas y hortalizas es un parámetro crítico en la adhesión bacetriana y por lo tanto en la remoción de las células por los desinfectantes. Los tratamientos con AEN mantuvieron los conteos en niveles no detectables (<1Log UFC/unidad) al final del alacenamiento. Sin embargo, el NaClO requirio más tiempo (21 días) para alcanzar valores similares en las reducciones. Por lo que el AEN puede ser usado como una alternativa al uso del NaClO, reduciendo el desperdicio de agua y siendo más amigable con el medio ambiente y sin dañar la salud de los trabajadores.
In the last decade, the production and the consumption of fresh fruits and vegetables have been increasing. But, its composition provides nutrients and conditions for microbial growth. Pathogens most frecuently associated with fresh produce include L. monoytogenes and Salmonella spp. Fresh produce are often consumed raw without any type of intervention that would reduce or eliminate pathogens prior to consumption. Sodium hypochlorite (SH) is the most used chemical disinfectant for washing fresh produce. However, the reaction of chlorine with other organic compounds reduce its effectiveness and may lead to the formation of potentially carcinogenic or mutagenic by-products. Recently, the application of electrolyzed water it has been reported to be effectiveness in reducing microflora and adhered pathogens to several fresh produce surface. The aim of this investigation was to compare the effectiveness and the degree of disinfection of sodium hypochlorite (SH) and neutral electrolyzed water (NEW) in the reduction of microflora and pathogenic microorganisms adhered to fresh produce surface. Tomatoes, avocado and asparagus were treated by immersion at various times of exposure (1-5 min) and total available chlorine concentration (70-300 ppm) of NEW. Natural flora (coliforms, yeast/molds and mesophilic bacterias) was determined. L. monocytogenes, and Salmonella spp, were inoculated on the surface of tomato and avocado and treated with NEW (200ppm) and subsequently were storage at 4ºC during 21 days. Cells were recovered on selective media. Sodium hypochlorite, NaClO (200 ppm) and destilled water were used as a control of a sanitizer and as a negative control, respectively. Higher microbial reduction (>3 Log CFU/unit) in natural flora was reached in the smooth surface of tomato, but in avocado, the effectiveness in sanitizing the vegetables is minimal with less than 2-3 Log CFU/unit, probably due to the roughness of the surface. The disinfection treatments of NEW (200) and SH (120) were similar in degree of effectiveness, no significant difference were found (p<0.05), both treatments reduced about 2 Log UFC/unit. Salmonella and L. monocytogenes cells inoculated in tomato, SH and NEW were able to inactivate up to 2.5 Log CFU/unit after 1 min. Compared to the disinfection treatments used in avocado, the reduction reached were <2 Log CFU/unit at the same concentration and time. The results indicate that topography of fruits and vegetables is a critical parameter for the adhesion of bacterial cells and hence, the removal of cells by disinfectants agents. Microbial counts of the pathogens analyzed in this study were reduced during the storage period. NEW treatment maintained the lowest values of pathogens during the whole storage period, reaching undectatable levels ( <1 Log CFU/unit) at the end of storage. Following a similar pattern, SH treatments needed more time (21 days) to reach same values of pathogens as NEW disinfection treatment. NEW could be used as an alternative disinfectant, is less corrosive, reduces wastewater and it is environmentally friendly and does not damage human health.
