Descripción : El estrés oxidativo está directamente relacionado con un estado inflamatorio, Caracterizado por la presencia de citocinas lo que puede producir una destrucción De las células ß pancreáticas, desarrollar diabetes y generar daño renal. El Objetivo de este trabajo fue evaluar in vivo, utilizando ratas wistar, el efecto Preventivo de una dieta suplementada (25%) con harina de frijol negro 8025 sobre El daño pancreático y renal inducido con 50 mg de estreptozotocina (stz) por kg P.c. en la harina, se cuantificó los fenoles totales, taninos condensados, Antocianinas y capacidad antioxidante por el método de abts. En la primera etapa del experimento, con grupos de animales; 1) sano, 2) stz y 3) frijol-stz, se evaluó el efecto preventivo sobre el daño pancreático, realizando Análisis histológico al páncreas, el cual reveló que el tratamiento protege hasta 40% los islotes pancreáticos. En la segunda etapa, grupos; 1) sano, 2) stz 3) stz-frijol y 4) frijol-stz-frijol, Se evaluó el efecto sobre el daño renal y pancreático. Semanalmente, se cuantificó La glucosa sanguínea.
