Description: El almidón es potencialmente utilizado en la industria como agente de relleno, floculante, adhesivo y como excipiente en tabletas, sin embargo debido a que día a día las exigencias de los consumidores van en aumento, las características propias de los almidones (fuentes convencionales y no convencionales) ya no son suficientes por lo que requieren de ser cambiadas o modificadas. Una de las modificaciones más utilizadas a nivel industrial es la modificación química por acetilación debido a que provee al almidón características de estabilidad y textura. Es importante conocer el efecto de diferentes grados de acetilación (bajo y alto) sobre las características fisicoquímicas, morfológicas, moleculares y estructurales del almidón de plátano macho (Musa paradisiaca L). La modificación química por acetilación provocó cambios en las características morfológicas y fisicoquímicas del almidón de plátano; debido a la despolimerización de los componentes del almidón (amilosa y amilopectina). En el almidón de plátano acetilado con bajo grado de sustitución (APABGS) no se alteraron las características morfológicas de los gránulos de almidón, sin embargo, en el almidón de plátano acetilado con alto grado de sustitución (APAAGS) los gránulos fueron modificados completamente. Con la espectroscopia de infrarrojo con transformadas de Fourier (EITF) se corroboró que se llevó a cabo la acetilación, mientras que a nivel laboratorio se cuantificó a los grupos acetilos presentes en el almidón y por lo tanto deducir el nivel de modificación de la muestras. La temperatura y la entalpia de gelatinización disminuyeron en mayor proporción en el APAAGS que en el APABGS. Se encontró que el APAAGS retrograda menos que el APABGS. Por otro lado, se observó que el grado de acetilación afectó la estructura del almidón de plátano con una reducción significativa en la viscosidad de las pastas de almidón. El patrón reológico dió a conocer que al acetilar se obtienen pastas y geles más firmes dependiendo del nivel de acetilación que estos presenten. También se encontró que al incrementar el grado de acetilación la estructura cristalina del almidón de plátano es afectada por los grupos acetilos, dando como resultado un patrón de difracción ligeramente amorfo, esto debido a la despolimerización de sus componentes durante la acetilación como se pudo observar al disminuir el peso molecular y el radio de giro de los almidones acetilados. Dicha despolimerización incrementó conforme aumentó el grado de acetilación. El almidón de plátano al ser acetilado presentó cambios en sus características morfológicas, así como también, en sus propiedades fisicoquímicas, funcionales y moleculares, dichos cambios están en función al nivel de acetilación
Starch is potentially used by industry as a bulking agent, flocculant, adhesive and exipient in tablets, but since consumer demand increases, every day, the characteristics of the starches (non-conventional and convetional sources) are no longer sufficient and therefore need to be changed or modified. One of the modifications most used in industry is chemical modification by acetylation because it provides stability and texture. It is important to know the effect of different degrees of acetylation (low and high) on the physicochemical, morphological, molecular and structural characteristics of plantain (Musa paradisiaca L) starch. Chemical modification by acetylation led to changes in morphological and physicochemical characteristics of plantain starch, due to the depolymerization of the starch components (amylase and amylopectin). In acetylated plantain starch with low substitution (APABGS, from its initials in Spanish), the morphology of the starch granule did not change; however, in acetylated plantain starch with high substitution (APAAGS, from its initials in Spanish) the granules were modified completely. With Fourier Transform Infrared Spectroscopy (FTIR), acetylation was shown to have been carried out, while at the laboratory level of change in the samples. The temperature and enthalpy of gelatinization decreased in a greater proportion in the APAAGS that in the APABGS. It was found that the APAAGS rearranges itself less than the APABGS. On the other hand, it was observed that the degree of acetylation affected the structure of plantain starch with a significant reduction in the viscosity of starch pastes. The reologhical pattern made it obvious that acetylation causes stronger pastes and geles depending on the level of acetylation. It was also found that upon increasing the degree of acetylation, the crystal structure of plantain starch is affected by acetyl groups, resulting in a slightly amorphous diffraction pattern; this is due to the depolymerization of its components during acetylation, as observed by lowering molecular weight and gyration radius of acetylated starches. This depolymerization increased with the degree of acetylation. When acetylated, plantain starch showed changes in its morphological characteristics, as well as in its physicochemical, functional and molecular properties. These changes are dependent on the level of acetylation
