Title: Desarrollo de una mantequilla de almendras adicionada con mucílago de Aloe vera

Description: Se realizó un estudio de mercado y conceptualización del producto con lo que se determinó realizar el desarrollo de una mantequilla de almendras (MA), la cual se estandarizó a base de análisis de tiempo de blanqueado, tiempo de tostado y molienda para obtener la mejor textura untable y color posible. Se evaluó la adición del mucílago de Aloe vera (MAV) como una alternativa de estabilizador de grasas en el producto, del cual se utilizaron diferentes porcentajes (0.5, 1 y 1.5%). Se analizó el comportamiento reológico, la inocuidad del alimento, la aceptación por parte del consumidor, la vida útil, el contenido nutrimental y la proyección financiera de producto concluido. Se le aplicaron al producto pruebas reológicas estáticas y dinámicas, las cuales se compararon con una mantequilla de cacahuate presente en mercado. Las pruebas reológicas aplicadas a ambas muestras presentaron un comportamiento no newtoniano perteneciente a los fluidos pseudoplásticos. El MAV aumentó las propiedades viscoelásticas de la muestra, siendo semejantes con las propiedades que presentan los productos estabilizados con aceites hidrogenados. Los análisis fisicoquímicos aplicados a la MA corroboraron la presencia de los omegas 6 y 9, un bajo nivel de azúcares y aporte de fibra. En el análisis microbiológico aplicado a la MA cumplió con los límites que marca la normativa mexicana vigente, lo cual nos indica que hubo unas buenas prácticas de laboratorio. Los análisis sensoriales indican una alta aceptación del producto por parte de los consumidores potenciales. La vida de anaquel se evaluó en base a la oxidación lipídica y la separación de aceites, en ambos casos la MA presentó valores inferiores a los reportados en la literatura convirtiendo al producto en un alimento no perecedero. La proyección financiera del proyecto mostró costes viables, lo que hace al producto factible para su comercialización. La innovación realizada en este proyecto fue incremental tecnológica por la utilización de un hidrocoloide como un estabilizante de grasas, además de también ser una innovación de nuevo uso ya que el MAV es utilizado principalmente en la rama cosmética.
A market study and conceptualization of the product was carried out, which determined the development of an almond butter (MA), which was standardized based on analysis of bleaching time, roasting time and grinding to obtain the best spreadable texture and color. The addition of Aloe vera mucilage (MAV) was evaluated as an alternative fat stabilizer in the product, of which different percentages were used (0.5, 1 and 1.5%). The rheological behavior, the innocuousness of the food, the acceptance by the consumer, the useful life, the nutritional content and the financial projection of the finished product were analyzed. Static and dynamic rheological tests were applied to the product, which were compared with a peanut butter present in the market. The rheological tests applied to both samples showed a non-Newtonian behavior belonging to the pseudoplastic fluids. The MAV increased the viscoelastic properties of the sample, being similar to the properties of the products stabilized with hydrogenated oils. The physicochemical analysis applied to the MA corroborated the presence of omegas 6 and 9, a low level of sugars and fiber intake. In the microbiological analysis applied to the MA, it fulfilled the limits established by the current Mexican regulations, which indicates that there were good laboratory practices. Sensory analyzes indicate a high acceptance of the product by potential consumers. The shelf life was evaluated based on lipid oxidation and oil separation, in both cases the MA presented values lower than those reported in the literature making the product a non-perishable food. The financial projection of the project showed viable costs, which makes the product feasible for commercialization. The innovation made in this project was technological incremental by the use of a hydrocolloid as a fat stabilizer, as well as being a new use innovation since the MAV is used mainly in the cosmetic branch.
