Description: "Actualmente el yogur estilo griego en México se ha convertido en un alimento popular, ocupando el 5 to lugar a nivel mundial en su consumo. Al ser el yogur estilo griego un yogur concentrado, su densidad calórica se ve aumentada, aditivos como los edulcorantes no calóricos y los miméticos de grasa son usados para disminuir las calorías aportadas por los alimentos. El glicomacropéptido (GMP) es obtenido principalmente por la precipitación con calor de las proteínas del suero quedando él en el sobrenadante, este péptido presenta algunas características de un mimético de grasa; sin embargo, no existen estudios reportados de su inclusión a un alimento con este propósito. Por lo que el objetivo del presente trabajo fue el desarrollo de un yogur estilo griego reducido en azúcar, utilizando el glicomacropéptido como sustituto de grasa y cuantificar su impacto en las propiedades físicas, químicas y sensoriales del yogur. Primeramente se determinó el efecto de los tratamientos térmicos 70oC (150 y 200 min), 80o (150 y 200 min) y 90o(60 min) sobre soluciones de aislado de WPI al 10% en la recuperación del glicomacropéptido. La incorporación del GMP en polvo se hizo en tres niveles (0, 0.25, 0.5 y 0.75%) a tres diferentes yogures reducidos en azúcar (reducido en grasa, bajo en grasa y sin grasa) a los cuales se les midió la acidez titulable, sinéresis, firmeza, reología y gránulos en el yogur. El tratamiento térmico que resultó en una mayor pureza del glicomacropéptido fue 90oC/60 min, logrando obtener el GMP en polvo con valores nutricionales similares al GMP comercializado por empresas internacionales La adición del GMP a los yogures griegos reducidos en azúcar tuvieron impacto en la disminución de los gránulos, la sinéresis y en geles más suaves, todo lo anterior sin afectar el pH del yogur. Los niveles de 0.5 y 0.75% fueron los que tuvieron un efecto significativo sobre las características de calidad mencionadas anteriormente del yogur. La vida de anaquel sensorial del yogur estilo griego reducido en azúcar, bajo en grasa y 0.75 % de GMP (YG RB ) sin conservadores y almacenado en refrigeración fue de 30 días y tuvo como indicador crítico la acidez titulable la cual tuvo una correlación de 0.9512 con respecto a la aceptación sensorial del yogur en el tiempo."
"The greek style yogurt consumption in Mexico is in 5 th place, becoming in a popular product. Energy density in greek style yogurt is increased due to is a concentrated yogurt; aditives like no-caloric sweeteners and fat mimetics are used to decrease amount of calories. The glycomacropeptide presents some characteristics of fat mimetic, however no studies have been reported in yogurt. Glycomacropeptide (GMP) isolation is achieved by heat precipitation of whey proteins. The objective of this work was development a greek style yogurt reduced in sugar with glycomacropeptide (GMP) as a fat substitute and its impact on the physical, chemical and sensory properties of the yogurt. The effect of heat treatments 70oC (150 and 200 min), 80o (150 and 200 min) and 90o (60 min) on 10% whey protein isolate solutions in the glycomacropeptide (GMP) recovery were determined. The GMP powder was incorporate at three different levels (0, 0.25, 0.5 and 0.75%) to three different reduced-fat yogurts (reduced fat, low fat and fat free) and titratable acidity, syneresis, firmness, rheology and grainy texture were measured in yogurt samples. Higher purity of the GMP was achieved at 90 °C/60 minutes. We obtained GMP powder with equal nutritional values to as those elaborated by international food companies. GMP in sugar-reduced yogurts no affect the yogurt pH. Since GMP reduced the grainy texture and syneresis, softer gels were obtained. GMP levels of 0.50 and 0.75% had better effect on the previous quality parameters. The sensory shelf life of greek style yogurt reduced in sugar, low fat and 0.75% of GMP ( YG RB ) stored in refrigeration and without preservative was 30 days and with titratable acidity as critical indicator."
