Título : Efecto antiobesogénico del subproducto de durazno y la biodisponibilidad de sus compuestos fitoquímicos

Descripción : "El objetivo del presente estudio fue concentrar la fibra dietaria (DF) y compuestos fenólicos (CF), así como mejorar las propiedades fisicoquímicas y biodisponibilidad de polifenoles del subproducto de durazno (SD) usando diferentes tratamientos con agua/etanol (100:0, 20:80, 50:50, 80:20 y 0:100, v/v) en relación 1:5 y 1:10 (p/v) por 5, 10, 20, 30 y 40 min a 21°C, y determinar su efecto en obesidad y sus complicaciones. Todos los tratamientos concentraron los CF y la FD total e insoluble, encontrándose el mayor contenido de FD en el SD tratado con 100% H2O por 5 min. Los polifenoles mayoritarios del SD tratado fueron el ácido 4-O-cafeoilquínico, clorogénico, y 1,5-di-O-cafeoilquínico. La capacidad de retención de agua y aceite, y la viscosidad aumentaron en los SD tratados. Las propiedades fisicoquímicas de la digesta y la biodisponibilidad de CF se evaluaron en ratas sanas alimentadas con una dieta estándar y suplementada con 8% de SD sin tratamiento y tratado con 100% H2O y con 20% EtOH por 5 min. La viscosidad y la capacidad de retención de agua de la digesta incrementaron en los animales alimentados con una dieta suplementada con el SD tratado con 100% H2O 5 min. Además, la excreción de metabolitos de los polifenoles extraíbles fue mayor para el grupo de SD tratado, y algunos polifenoles no extraíbles como ácido p-cumaroil glucólico, galoil glucosa, kaemferol y dihidroquercetina fueron mayoritarios en la orina de los animales alimentados con el SD sin tratar. El SD sin tratamiento y tratado con 100% H2O 5 min fueron evaluados en animales alimentados con una dieta alta en grasa y fructosa y suplementados con los SD. El SD sin tratamiento tuvo mayor efecto sobre el control del peso corporal y mejoró la resistencia a la insulina, al incrementar el contenido de glucógeno hepático y disminuyó la actividad de PEPCK. También tuvo mayor efecto en los niveles de triglicéridos en suero que el SD tratado, atenuando la esteatosis hepática, al disminuir la expresión de Srebp1 y Fasn, y al incrementar la expresión de Cpt1 en hígado. Estos beneficios se observaron, a pesar de las mejoras de las propiedades fisicoquímicas y de la biodisponibilidad de los CF del SD tratado con 100% H2O 5 min. El SD sin tratar puede ser una alternativa para el control de algunas complicaciones de la obesidad."
"The aim of this study was to concentrate the DF and phenolic compounds (PC) as well as to improve the physicochemical properties and polyphenols bioavailability of peach by-products (PB) using different treatments with water/ethanol and to determinate their effect on obesity and its complications. The first phase was to concentrate the DF and PC of the PB, and to evaluate their physicochemical properties. The PB was treated with water/ethanol (100:0, 20:80, 50:50, 80:20 and 0:100, v/v) in a ratio of 1:5 and 1:10 (w/v) for 5, 10, 20, 30 and 40 min at 21°C and its PC content and physicochemical properties were determined. All the treatments concentrated the PC, and the total and insoluble DF, finding the highest DF content in the PB treated with 100% H2O for 5 min. The majoritarian polyphenols of the treated PB were 4-O-Cafeoilquinic, chlorogenic, and 1,5-Di-O-Cafeoilquinic acid. The water and oil retention capacity, and the viscosity increased in the treated by-products. The digesta physicochemical properties and the PC bioavailability were evaluated in healthy rats fed with a standard diet supplemented with 8% of the untreated PB, PB treated with 100% H2O and with PB treated with 20% EtOH for 5 min. The digesta viscosity and water retention capacity increased in the animals fed with diet supplemented with the treated PB with 100% H2O 5 min. Moreover, the extractable polyphenols metabolites excretion was higher in the treated PB group, and some no extractable polyphenols such as p-cummaroil glycolic acid, glucose galoil, kaempferol and dihydroquercetin were the majoritarian in the animals fed with the untreated PB. The untreated and treated PB with 100% H2O 5 min were evaluated in animals fed with high fat and fructose diet and supplemented with the peach by-products. Despite the improve of the physicochemical properties and PC bioavailability of the PB treated with 100% H2O 5 min, the untreated PB had major effect in the body weight control, and improved the insulin resistance due to it increased the hepatic glycogen content, and decreased the PEPCK activity. Furthermore, the untreated PB shown lower serum triglycerides levels than the treated PB, diminishing the hepatic steatosis, since, it decreased the Srebp1 and Fasn expression and increased the Cpt1 expression in liver. The untreated PB could be an alternative to the control of some obesity complications."
