dc.descriptionEn la actualidad se han realizado extensos estudios clínicos que han reportado las propiedades benéficas del pasto de cebada como infusión o en polvo seco, entre estos se destaca su efecto antiinflamatorio, inmunoestimulador, antioxidante y recientemente su efecto antiproliferativo. El presente trabajo desarrolla el perfil citotóxico de un extracto de pasto de cebada (EPC), de la variedad Esmeralda en células transformadas de cáncer de mama y próstata. Se realizó un extracto metanólico y liofilizado de pasto de cebada, el cual fue utilizado para la determinación de la concentración inhibitoria 50 (CI50) que fue de 100 μg/ml del liofilizado. Para el estudio de citotoxicidad se utilizaron las siguientes líneas celulares: línea celular de cáncer de próstata (PC-3), línea celular de cáncer mama (MCF-7 y MDA-MB 231), y fibroblastos humanos. Se realizó citometría de flujo de la línea celular de cáncer de próstata (PC-3) y de fibroblastos humanos con el objetivo de analizar la vía de muerte de cada una. Los resultado indican que la muerte celular es de caracter apoptótico con arresto del ciclo celular en fase S en fibroblastos humanos y G0/G1 en cáncer de próstata (PC-3), así como un alto porcentaje de activación de caspasas. Por los hallazgos descritos en este trabajo es de suma importancia para el área de investigación y desarrollo alimentario, ampliar esta evidencia in vitro con la finalidad de continuar con estos estudios y proveer información a escala molecular que permita entender los mecanismos utilizados por EPC y de manera futura ampliar las opciones de consumo de fitoquímicos que están disponibles y, a través de su estudio, promover la utilización y consumo óptimo de estos en forma de alimentos funcionales.es_ES
dc.descriptionNowadays, extensive clinical studies have been carried out that have reported the beneficial properties of barley grass as an infusion or dry powder, among these its anti-inflammatory, immunostimulatory, antioxidant and recently its antiproliferative effect. The present work develops the cytotoxic profile of an extract of barley grass (EPC), of the Esmeralda variety in cells transformed from breast and prostate cancer. A methanolic and lyophilized extract of barley grass was made, which was used for the determination of the inhibitory concentration 50 (IC 50) which was 100 μg / ml of the lyophilisate. For the study of cytotoxicity, the following cell lines were used: prostate cancer cell line (PC-3), breast cancer cell line (MCF-7 and MDA-MB 231), and human fibroblasts. Flow cytometry of the prostate cancer cell line (PC-3) and human fibroblasts was performed in order to analyze the pathway of death of each one. The results indicate that cell death is apoptotic with arrest of the cell cycle in S phase in human fibroblasts and G0 / G1 in prostate cancer (PC-3), as well as a high percentage of caspase activation. Due to the findings described in this work, it is very important for the area of food research and development to expand this in vitro evidence in order to continue with these studies and provide information on a molecular scale that allows us to understand the mechanisms used by EPC and in a future, expand the options of consumption of phytochemicals that are available, and, through their study, promote the use and optimal consumption of these in the form of functional foods.es_ES
